The origin of Cognac aromas

Cognac's aromas are the fruit of a meticulous process that begins in the vineyard and continues throughout vinification, distillation and ageing. Several factors influence the aromatic palette:

  • The soil : In Grande Champagne, limestone soils give cognac great finesse and exceptional ageing potential.
  • The grape variety : Ugni Blanc is the predominant grape variety, providing fruity aromas and an acidity that favors good distillation.
  • The distillation : Double toasting in copper stills concentrates and enhances aromas.
  • Aging in oak barrels : It enriches cognac with woody, spicy and vanilla notes, thanks to exchanges between alcohol and wood.
  • Le type de chai: chai humide ou chai sec, cela n’a pas le même impact sur l’eau-de-vie.

The Cognac aromatic palette

Cognac's aromas evolve over time and with age. They can be grouped into several major families:

  • Fruity aromas : Grape, apricot, apple, plum, fig, citrus.
  • Floral aromas : Jasmine, violet, lime blossom, orange blossom.
  • Spicy aromas : Vanilla, cinnamon, pepper, nutmeg.
  • Woody aromas : Oak, cedar, tobacco.
  • Gourmet aromas : Honey, caramel, chocolate, hazelnut.
  • Rancio aromas : A characteristic of old cognacs, with notes of undergrowth, leather and nuts.

The Complexity of Cognac: Evolution over time

Ageing in oak barrels is a key stage in the aromatic development of cognac. Over time, fruity and floral notes evolve into more complex, deeper aromas. A young cognac, such as a VS, will reveal mainly fruity and floral aromas, while an XO or Hors d'Âge will offer exceptional richness with nuances of rancio and deep spices.
