The alcoholic fermentation is finished, the white wine must be distilled into Cognac eau-de-vie in a Charentais still called "de repasse". As a distiller, we can distill only the wines harvested on our vineyard.

After having provided all our stocks (wine of the harvest, Pineau des Charentes, Cognac of Grande Champagne) to the customs, the seals have been lifted.

We can now distill our harvest. We must finish before March 31 following the harvest. Distillation is the process of evaporating the alcohol and then condensing it to increase the proportion of alcohol in the final product.
