Does cognac improve in the bottle?

Independent winegrowers in 1st growth cognac, all year round, we welcome visitors who frequently ask us this question:

Does cognac continue to age once bottled?

Unlike wine, which evolves and improves over the years in the cellar, cognac undergoes no significant transformation after bottling.

But why? Scientific explanations.

1. Cognac ageing: alchemy in the barrel

Cognac draws its unique character from a rigorous aging process in oak barrels, where it develops its aromas and complexity. This phenomenon is based on several factors:

  • Controlled oxidation : The contact between air and alcohol through the wood pores allows a gradual aromatic evolution.
  • Extraction of wood compounds : Tannins and other phenolic compounds from oak enrich cognac, giving it roundness and depth.
  • The phenomenon of evaporation: the angels' share : Some of the alcohol evaporates over the years, helping to harmonize flavors and concentrate aromas.

As long as cognac is in barrel, it interacts with its environment, gaining in complexity. But once bottled, this process comes to a screeching halt.

2. The glass bottle: a neutral container for cognac

As soon as the cognac is transferred to a hermetically sealed glass bottle, exchanges with the outside world almost completely cease. Here's why:

  • Lack of oxygenation Contrary to porous casks, glass does not allow oxygen to pass through. As a result, cognac cannot evolve as it would in a barrel.
  • Chemical stability The absence of interaction with external components means that the cognac's aromas and structure remain as they were during bottling.
  • No material extraction Glass doesn't add any extra components, unlike barrel wood.

3. Factors that can alter bottled cognac

Although cognac no longer improves in the bottle, it can still deteriorate if storage conditions are not respected. Here are the main threats :

  • Light exposure UV rays can alter aromas and cause premature oxidation.
  • Temperature variations : Excessive heat accelerates certain undesirable chemical reactions.
  • Poor cap closure : A poorly-fitting cork can let air in, leading to a possible deterioration in aromas.

As you can see, cognac is at its best during bottling.

Unlike vins de garde, cognac does not gain in quality once bottled. It should be considered as an accomplished product, that has reached its full aromatic potential before bottling. Proper storage preserves the wine's qualities, but will not improve it further or allow it to develop additional aromas.

So, if you have an old bottle of cognac, it won't be any more complex than the day it was bottled, but it will still offer an exceptional taste experience, provided it has been well preserved.
