Scientific explanations.<\/p>\n<h3><strong>1. Cognac ageing: alchemy in the barrel<\/strong><\/h3>\n<p><a href=\"https:\/\/www.cognac-guillon-painturaud.fr\/en\/cognac-grande-champagne\/\">Cognac<\/a> draws its unique character from a rigorous aging process in oak barrels, where it develops its aromas and complexity. This phenomenon is based on several factors:<\/p>\n<ul>\n<li><strong>Controlled oxidation<\/strong> : The contact between air and alcohol through the wood pores allows a gradual aromatic evolution.<\/li>\n<li><strong>Extraction of wood compounds<\/strong> : Tannins and other phenolic compounds from oak enrich cognac, giving it roundness and depth.<\/li>\n<li><strong>The phenomenon of evaporation: the angels' share<\/strong> : Some of the alcohol evaporates over the years, helping to harmonize flavors and concentrate aromas.<\/li>\n<\/ul>\n<p>As long as cognac is in barrel, it interacts with its environment, gaining in complexity. But once bottled, this process comes to a screeching halt.<\/p>\n<h3><strong>2. The glass bottle: a neutral container for cognac<\/strong><\/h3>\n<p>As soon as the cognac is transferred to a hermetically sealed glass bottle, exchanges with the outside world almost completely cease. Here's why:<\/p>\n<ul>\n<li><strong>Lack of oxygenation<\/strong> Contrary to porous casks, glass does not allow oxygen to pass through. As a result, cognac cannot evolve as it would in a barrel.<\/li>\n<li><strong>Chemical stability<\/strong> The absence of interaction with external components means that the cognac's aromas and structure remain as they were during bottling.<\/li>\n<li><strong>No material extraction<\/strong> Glass doesn't add any extra components, unlike barrel wood.<\/li>\n<\/ul>\n<h3><strong>3. It should be considered as <strong>an accomplished product<\/strong>, that has reached its full aromatic potential before bottling.
