{"id":12333,"date":"2020-06-18T10:02:35","date_gmt":"2020-06-18T08:02:35","guid":{"rendered":"https:\/\/www.cognac-guillon-painturaud.fr\/?p=12333"},"modified":"2025-04-23T14:37:33","modified_gmt":"2025-04-23T12:37:33","slug":"les-crus-de-l-appellation-cognac","status":"publish","type":"post","link":"https:\/\/www.cognac-guillon-painturaud.fr\/en\/les-crus-de-l-appellation-cognac\/","title":{"rendered":"The crus of the Cognac designation"},"content":{"rendered":"<blockquote><p>A decree dated January 13, 1938 delimited the Cognac production area (about 80,000 ha) into 6 classified crus, representing <a href=\"https:\/\/www.cognac.fr\/decouvrir\/vignoble\/les-crus\/\" target=\"_blank\" rel=\"noopener\">6 different designations.<\/a>.<br \/>\nOfficially delimited in 1909, these crus have been delimited according to the different soils, sub-soils and micro-climates, giving each a particularity to the eaux-de-vie they produce. The soils of Grande Champagne are clay-limestone, and the closer you get to the Atlantic coast, the sandier the soils. The grape variety used for Cognac remains the same at 98%: it is <a href=\"https:\/\/www.cognac-guillon-painturaud.fr\/en\/le-blog\/les-cepages-blancs-cognac-pineau\/\">Ugni-Blanc<\/a>.<\/p><\/blockquote>\n<h2>1st cru of Cognac : The Grande Champagne<\/h2>\n<p>The Grande Champagne is the most central cru of the vineyard, between the river Charente and its tributary the N\u00e9. It represents about 17% of the Cognac vineyard (13,200 ha).<\/p>\n<p><a href=\"https:\/\/www.cognac-guillon-painturaud.fr\/en\/le-blog\/la-geologie-en-grande-champagne\/\">Its clay-limestone soil<\/a> The clay-limestone soil produces exceptional, fine, fragrant eaux-de-vie, which require long ageing to express their aromatic complexity. Ageing potential is a key advantage of this premier cru. The eaux-de-vie can be aged for a very long time; even after 50 years, they will continue to develop their aromas. In contrast, for the other crus, the ageing potential is more limited and the eau-de-vie will reach its peak after 10 or 20 years.<\/p>\n<h2>The 5 other crus of the appellation<\/h2>\n<h3>Petite Champagne<\/h3>\n<p>Elle a sensiblement les m\u00eames caract\u00e9ristiques, avec un sol un peu moins calcaire n\u00e9anmoins. Elle repr\u00e9sente 19% du vignoble (de 15 200 ha). N.B : l\u2019appellation \u00ab <a href=\"https:\/\/www.cognac-guillon-painturaud.fr\/en\/que-signifie-lappellation-fine-champagne\/\">Cognac Fine Champagne<\/a> \u00bb correspond \u00e0 50% minimum de Cognac Grande-Champagne, compl\u00e9t\u00e9 avec de la Petite Champagne. { Le terme champagne vient du latin \u00ab campania \u00bb soit campagne ou plaine d\u00e9couverte : en opposition aux zones bois\u00e9es. Ce terme agronomique est utilis\u00e9 en r\u00e9f\u00e9rence aux terres champenoises, ayant le m\u00eame sol. }<\/p>\n<h3>The Borderies<\/h3>\n<p>It gives round and sweet Eaux-de-vie. It is the smallest cru, occupying 5% of the vineyard (and renowned for the quality of its eaux-de-vie).<\/p>\n<h3>The Fins Bois<\/h3>\n<p>They surround the previous crus on 40% of the total surface, and are recognised by the suppleness of their eaux-de-vie.<\/p>\n<h3>The Bons Bois (12%) and the Bois Ordinaires (1.5%)<\/h3>\n<p>They are made up of silty or sandy soils.<br \/>\nThese last three crus produce eaux-de-vie with low ageing.<\/p>\n<h4>Advantages of a family estate<\/h4>\n<p>Our family estate is ideally located in Grande-Champagne, at the heart of the Cognac vineyard, the first cru of the designation. Thanks to this geographical location, we are<a href=\"https:\/\/www.cognac-guillon-painturaud.fr\/en\/notre-savoir-faire\/\"> specialised<\/a> in very long ageing! We let our eaux-de-vie sleep peacefully and take the time to develop their best aromas. These aromas are frequently catalogued in order to assess how much longer our eaux-de-vie can spend in barrel. Once the best aromas and all the finesse we're looking for have emerged, it's time to start blending!<\/p>\n<p>To be called cognac, it must be produced in the appellation zone, in other words in one of the six crus mentioned. Outside this area, we call it brandy.
